Tempering by hand could be tricky work subject to external factors that even masters at tempering couldn’t control so most have invested in a chocolate tempering machine. With one of these gadgets, the entire tempering operation is automated and keeps tempers maintained for a longer duration. Maintaining of specific temperatures is also taken care of by a microprocessor. Manual tempering on the other hand is difficult because maintaining accurate temperatures yourself can cause errors and this may lead to repeating the process again.

The history of tabliering started in France and a marble slab is used to work upon the chocolate to cool it. On the upper pan of a double boiler, place the chocolate (which, previously, was cut into small chunks). Pat dry such other equipment you’ll be using: a bread knife, a chopping board, a spatula, a mixing bowl, a thermometer to measure low temperatures like 82F and a cookie sheet.

In the lower pan of the double boiler, boil water to melt the chocolate to a temperature of 108-115F and during this, you should keep stirring the contents so it doesn’t burn. There is a different melting temperature for every type of chocolate. The molten chocolate is poured onto a mixing bowl and while pouring, you should watch if the chocolate flows smoothly and not fall lumpy. Moisture must also be avoided at all costs.
This melted chocolate is called mush and is divided into two parts, 2/3 and 1/3. The 2/3rd part is worked upon on a marble slab with a spatula till you cool it to a temperature of 80-82F. The 1/3 part is continuously kept at 100F.

After the 2/3 portion is worked upon, you should blend in the 1/3 part with this and the entire lot is worked upon and cooled to 80-82F. Reheating must be done as follows: dark chocolate variety up to 88-90F, semi-sweet, 86-88F and white chocolate variety, up to 82-84F. You can infer that the chocolate is tempered if you observe it has hardened and has acquired shine around the spatula, when dried for five minutes.

If you fail in maintaining accurate temperatures, tempering must be done over. The tempered mush can stay in that state longer if it’s set on a bain-marie or a heating pad although take care that no moisture still gets into the chocolate.

They re-crystallize into six types of crystals that dominate during six unique temperatures. Just to counter this phenomenon, your alertness is required so that there is no deviation in the specific temperatures you should be watching. Even a small slip may lead to repeating the whole tempering process again.
Your aim is to temper the chocolates so as to impart shine, smoothness and crispness to them and you are helped in this process only by one crystal out of the six, i.e. type V crystals. These crystals alone are capable of giving chocolates these desirable qualities.
Tempering by hand can be carried out in two ways. The first is melting the chocolate to the specific temperature and working upon it till it is successfully tempered. The next method is to seek the help of a seed to temper your melted chocolate. Here the seed is an already tempered chocolate. You should maintain specific temperatures not only during these two processes but even when you subject your tempered chocolate to the dipping and molding.
Bulk-making of chocolates should be done only by using a tempering machine as it makes a few things easier for you. You need not monitor temperatures since a programmed computer chip does it, moisture is no more a hassle, you can produce more type V crystals that make chocolates more shiny and smooth and the best of all, heating, cooling and reheating are automated processes.

OK, I confess, I was that Sally - and more than once too. But
now I’ve learned three key secrets for choosing flowers for my
table centerpieces. Now I can add beauty to my dinner parties
and subtract frustration and stress from my day.

Here are the three key secrets.

1)Less choice means less stress. Eliminate impractical choices.
That means you shouldn’t choose tall flowers or flowers that are
scented for your table centerpiece.

Your flower arrangement should not be more than about 5 inches
high. Otherwise your guests have to peer through the floral
bushes to see each other across the table.

So you can eliminate tall flowers unless you can cut them down.
Now you won’t be swayed by a beautiful but impractical purchase.
Sally’s tall orchids were stunning, but they didn’t cut it for a
sit-down dinner table arrangement.

Scented flowers are appealing, but not at the dinner table.
Don’t put highly scented flowers on the dinner table because
their aroma can fight with the food aromas. Some guests may even
be allergic to the strong scent as well. The scented hyacinths
Sally was eyeing would not be good choices for the dinner table.

Now you can eliminate a large range of flowers before you even
get to the store.

Remember, less choice means less stress.

2)White works with everything. White tablecloths work with every
color of flower.

White taper candles work with every color of flower.

White or crystal candlesticks work with any color of flower.

And white flowers go with everything.

How easy could that be?

3)Decide on your color before you go shopping If you do want
some color in your flowers, you already know that any color will
go because of your white tablecloth and your white candles.

If you want color, select your color choices BEFORE you go
shopping. Don’t come home with a color that is lovely but
doesn’t work with your scheme. Making a color plan will really
help you avoid stress at the flower shop.

If your first color choice isn’t available when you get there,
go to your second choice.

If you see some flowers you absolutely have to have, but they
aren’t one of your choices, don’t change your whole plan for the
dining room table centerpiece. Just buy those must-have flowers
to decorate your living room. Then go back to the plan and
select one of your color choices for the dining room table.

So don’t be like Sally. Put the three key flower-choosing
